INTERNATIONALLY ACCLAIMED CHEF JAMES WALLIS JOINS LOVE.FISH TEAM

love.fish on The Streets of Barangaroo have appointed James Wallis as their new Head Chef

James Wallis knows his way around a commercial kitchen. In fact, this former Head Chef of Indu Dining and The Tilbury has been cooking in Sydney’s kitchens since his arrival on Aussie shores in 2015, and he’s now dropped anchor to lead the kitchen team at love.fish, in his new role as Head Chef.

The culinary passions of this British-born chef lie in sourcing and working with local, quality ingredients and developing new and exciting dishes. His passion for sustainabilty is the perfect fit with the love.fish brand.

Prior to arriving in Australia, James was Head Chef at the 2AA Rosette Room Restaurant in Manchester, and Head Chef at Milestone in Sheffield. During his time at Milestone the establishment was named “Best British Restaurant” by Gordon Ramsay, as part of his TV program, Best Restaurant, which served as a career-defining moment for Wallis.

“The opportunity to work alongside Gordon Ramsay and serve food in his flagship Three-Michelin-starred restaurant, was definitely a career highlight for me,” said Wallis.

Having travelled the world to experience different countries and cultures, James has discovered a passion for Australian produce and is excited to call Sydney and love.fish home.

“I am really excited to be working alongside Michael and Michelle at love.fish,” said Wallis. “Their ethos of sourcing and serving sustainable Australian seafood really speaks to me. When you have a great ingredient to start with, you really don’t need to do a lot to make that shine. I can’t wait to bring some of my nose-to-tail cooking style to love.fish, and to have the opportunity to work with such beautiful produce.”
